Parsley Curly (Petroselinum crispum Var crispum)- An easy to grow herb with a variety of uses, Parsley Curly is a fast growing plant that will grow well in any veggie garden or pot. An easy to use herb, Parsley Curly is great for using with other herbs, and will enhance the flavour of anything it is mixed with, and adding just prior to serving will lift the other flavours of the dish. And of course, this variety is often used as an ornamental garnish on plates, however it is the more bitter and strongly flavoured mature leaves that are used for this. When picked quite young and tender, Curly Parsley have a mild 'green' flavour and softer texture. Parsley is an extremely easy herb to grow and thrives in most climates and soils. For best results and a milder taste, harvest regularly and grow in a well drained fertile soil and water regularly in warmer climates. Grows 30-40cm W, 30-40cm H
Thyme Lemon (Thymus x citriodorus) - An attractive and aromatic creeping ground cover, Thyme Lemon is an essential addition to any well-stocked herb garden. Its bright, citrus-scented foliage makes it ideal for planting in pots near the kitchen, as a useful and decorative addition to rockeries or borders, or even beneath a washing line, where its refreshing aroma is released with each step. It also makes a hardy, low-growing lawn substitute, tolerating light foot traffic while adding both fragrance and charm.
As a culinary herb, its zesty flavour can be used in place of lemon zest or juice, and it also serves as a delicious alternative wherever regular thyme is called for in recipes.
Traditionally, Thyme has been used for its antibacterial and antiseptic properties. Herbal teas made from its leaves have long been used to help ease a variety of ailments, particularly those related to the respiratory system.
In the garden, Thyme is also a fantastic companion plant. It grows well alongside vegetables like cabbage and onions, and enhances the health and growth of roses.
Lemon Thyme prefers well-drained soil and a sunny, open position. It dislikes waterlogged conditions, so care should be taken in heavier soils. Thriving in pots or garden beds, its dainty flowers and aromatic leaves make it both a practical and ornamental favourite. Grows 40-60cm W, 10-20cm H
Coriander Common (Coriandrum sativum) - A fast growing herb also known as Cilatro or Chinese Parsley, Coriander is best grown in the cooler weather as warmer temperatures will cause it to bolt to flower and seed. All parts of this plant are edible, but the fresh leaves and seeds are most commonly used in a number of different cuisines, however the roots have a more concentrated flavour and are often used in soups and curry pastes. The small clumps of bright green leaves have scalloped edges and a strong aromatic flavour when crushed, adding tart lemon/lime notes to a dish. Coriander benefits from being grown in a well fertilised soil with regular watering, and feeding regularly with a high Nitrogen fertiliser to keep it actively growing. Grows 20-30cm W, 40-50cm H
