Finger Lime Pink Ice

One of the first Native Limes to be commercialised, Finger Lime Pink Ice is an Australian Native Bush Food that is taking the world by storm. This small evergreen tree is well suited to being grown in a pot and produces red to burgundy coloured fruit with clear to pale pink tangy pulp.

Finger Limes are an amazing native that features unusual 6-12 cm long finger like fruit on a spiky bush. The unique fruit of these delicious Limes comes in various colours including pink, red, green and yellow, and is full of spherical juice vesicles that resemble caviar. These vesicles burst in your mouth bringing a tangy effervescence and flavours that are truly out of this world making them perfect for salads, garnishes for fish and seafood, and outstanding in drinks. Fruit can be used fresh or in cooking, and the flavour does not diminish after freezing. Pale pink-white flowers appear in Summer/Autumn, followed by the elongated fruit which will begin to ripen on the tree during Winter. Once the fruit changes colour and is easy to remove from the tree it is ready for harvest.

Finger Limes are grown in a similar fashion to other citrus, preferring a sheltered position away from wind and protected from frost. A large pot is also a good way of growing this tree but care needs to be taken when handling and siting this tree as there are large thorns amongst the foliage. Like all produce plants, for best results we recommend regular watering and fertiliser, and whilst no pruning is generally required, and damaged branches can be removed and plants can be kept pruned to a convenient size.
