The knobbly tubers look like wrinkly carrots, and can be used much the same as potatoes are used, (boiled, baked or fried), but unlike potatoes, Oca can be eaten raw in many different ways. Soil can be hilled around plants as they are growing to encourage a larger yield. Once tubers are ready for harvest, foliage will begin to die back.
