Horseradish (Armoracia rusticana) is a clumping perennial grown for its tapering fleshy root; Horseradish is now the primary ingredient in Wasabi due to the scarcity of the traditional ingredient. This is the true Japanese Wasabi so both the leaves and roots of this plant are edible. The roots are grated to create the hot and spice delicacy enjoyed worldwide and the foliage and stems can be used fresh in salads. Wasabi requires a cool shaded position in moist soils and needs regular watering, particularly during the summer months. For best results protect from direct sun and frost.
