Jerusalem Artichokes

The edible root of a particular type of Sunflower, Jerusalem Artichokes are also known as Sunchokes or Earth Apple. This fast growing root vegetable is quite vigorous, almost to the point of being invasive so care does need to be taken when deciding where to plant it.

A tall growing perennial plant, Jerusalem Artichoke prefers a full sun position in a reasonably well draining soil. Regular watering and fertilising during the growing season will result in a good crop of large tubers so it is worthwhile paying attention to these factors for a good crop.

Plants will produce sunflower-like flowers in Summer, before beginning to die back in Autumn when the harvest can begin. Traditionally said to be sweeter if left in the ground till after the first frost, Jerusalem Artichokes do not store terribly well so they can be left in the ground to be harvested as required in cooler climates. In warmer climates they are better off fully harvested and stored in sawdust or sand in a cool dark place. Simply digging up with a garden fork is the best method for harvest, and any left over tubers will reshoot as the weather warms into Spring.

Perfect for using in soups and stews, Jerusalem Artichokes can be used anywhere you would use Potatoes; their slightly nutty earthy flavour is quite pleasant and blends well with a multitude of dishes. They are particularly good for diabetics as they contain no starch.
